I emailed them on Friday because they told me I'd hear by w/c 1 Dec and they said "We have had an unprecedented number of applications for our Vacation Scheme, and it is therefore taking us some time to review all of them. We are hoping to have informed everybody of their outcome by mid-January, so you should hear from us soon."
I've just submitted an application for their VS. I would say there's no harm in giving it a shot, we're still over 2 weeks away from their application deadline.

Yes - you can reference this as part of your reason. Remember it shouldn’t be your sole explanation, purely because something drew you to apply to the firm the first time around (before you met the partner at the AC), but it’s fine to reference something like this as part of your answer.

Yes - you can include any summer schools/exchange programmes, or any online courses. I don’t think you necessarily need to detail the skills learnt as such but if the title of the course isn’t necessarily obvious as to what you studied, then you can clarify the subjects you learnt on the course.
I wouldn’t chase them until the new year (most likely the 3rd or 4th at the earliest). If the portal only changes 4 days ago, of which part of that is a weekend, I really wouldn’t expect at update for another 2 weeks, but given its Christmas, realistically that isn’t until the new year now.
