Honestly the shift to online recruitment events is probably the best thing to happen to diversity in the profession in years. Huge boon in terms of accessibility outside the hallowed halls of institutions ancient and venerable.

Re: prestige, there is a sort of halo effect that oxbridge educations confer. This is ofc somewhat true within the UK, but has become less significant in the past few decades.

Few, if any, will say outright that they prioritise RG/Oxbridge. Others have noted that there is a self-selection element, and that is responsible for a lot of the discrepancy.
However - and I don't have data to support this, this is entirely anecdotal - the US firms with very small footprints...
It's not a question I'd expect to come up unless you have experience in those areas or studied business/finance.
Ultimately focus on what it is about law that drew you in. The commonality between all those roles is like... that you work on deals. The type of analytical work you undertake...
If you have three things that are meaningful to you, prepare three things and focus on whatever is most important - if the two things you've prepared are really your key drivers, I personally wouldn't spend time on a throwaway point or something that is clearly an afterthought.

My VI was 2 Jan and have heard nothing since. From posts here, lead time on AC invites after VI seems to have been 1-2 weeks but that might be different if they've got loads of applications from the last week to get through right now.
Strengths assessment is a pretty straightforward SJT. Mayer Brown's verbal reasoning is a bit unlike anything I've seen elsewhere, and tests a broader range of attributes than straight-on critical reasoning.
