I'm a teacher - so I get school holiday off. Otherwise you can apply for leave for things like close family funerals etc but you don't get to take holiday. It's not the employers fault, it's just how it works because obviously that's how schools are.

Personally, I wouldn't put in work experience I hadn't done yet. So, I'd definitely include a vacation scheme I've completed but not one that's coming up. That's just my personal opinion.
