Always happy to offer insights based on my own experience :) I'm currently working as a Paralegal in a small City firm which specialises in construction and insurance. I agree with everyone here when they said that the work definitely depends on the firm you work for - I've found that...
I didn't apply to to Charles Russell Speechlys but for my applications I wrote out the firm's name in full the first time I used it in the written answers (usually in the first question), with the abbreviated version in brackets - and then used the abbreviation any other time in my application...
I typically didn't include addresses but I would include the date (aligned to the right) and then "Dear Graduate Recruitment,", followed by "Yours faithfully," at the closing. :)
For my applications, I typically wrote 100-150 words for each work experience about my main responsibilities and any memorable tasks undertaken in that role (if it was a short work experience). I also mentioned how I obtained the role if it didn't ask already! I didn't usually use the STAR...
I haven't either! I submitted my deadline a fair few days before the deadline as well but not a peep - no VI invitation either. I think someone here mentioned that we should hear back from them sometime before the end of February though. :)

I completed the MB online tests this morning so hopefully it'll be positive news after I hear back from them!
I interviewed with them last week (quite a tight turnaround, only received an email about it exactly a week before) and someone I know had theirs on Thursday so I would assume it's ongoing! Haven't heard back from them yet since though.
An interesting read - thanks for the link! Makes me question the integrity of other firms' claims of a 'genuine commitment to diversity and inclusion'... even if they hire diversely (?) at graduate level, the story might be very different as you move up the career ladder.
