Slaughters do like a short cover letter but still include the main things (why you, why them, why law). I just had a small paragraph for each and said very very little about why me since a lot of that was already in my CV. My paragraphs were about 4-5 sentences long, if that helps!

I agree it probably isn't as important in terms of getting raw information as people might think. But at the end of the day people will remain interested, because it's a competitive process (so extra points if you get one) and an easy way of demonstrating your interest in a firm.
I just bullet pointed everything, including the work experience section. Admittedly the individual points were long full sentences but the format was certainly bullet points
