They often do but I would not know why. I am assuming that they are checking what you post and what you liked too to see what kind of person you are but I am just assuming here.
It might be in the future so I would email the firm sending them the full list of courses at least you have quenched the risks that may arise. At this stage, it should not be a big issue though.

I would put everything that appears on your transcripts and records so there is not discrepancy between your documents and what you say. I had so many subjects to put too but I out everything because they appeared on my transcripts so I would always recommend following what your transcripts say.

I think it is totally fine to mention it as your last reason, I used it plenty of time myself when I was applying and it worked. For my Gibson interview, they actually were impressed by the amount of research I have done based on something I said about pro bono which is not advertised anywhere...
