Paralegal jobs tend to ask for 2yrs + where I am and while TCs were the logical answer, many many others have the same idea.
I'd be honest about it unless the American firm has no presence in HK as you might want to go back to them at some point.
Actually if you haven't took the TC then go for the Vac scheme if you feel you might prefer a London TC.
Personally, Grad apprenticeships seem slightly easier to get than TCs as those who have taken SQE1 can’t apply and in-house roles tend to be less competitive in general as they aren’t advertised
